Apple and cinnamon waffles

You will need a German waffle iron (heart shaped) for this recipe

This will serve about 2 hungry people!

Ingredients:

300g flour
75g sugar
1 tsp baking powder
½ tsp salt
1 ½ tbsp oil
250ml soya milk (or other non-dairy milk)
50ml water
Oil/vegan margarine to grease the iron
1 medium sized apple
2 tsp ground cinnamon

Method:

  1. Wash the apple then peel, core and slice it
  2. Bring the apple to the boil, then gently simmer for 15-20 minutes or until soft.
  3. Drain the apple, then, using a hand blender/potato masher or spoon, mash the apples into a thick puree, then add the cinnamon and mix well
  4. Place in the fridge to cool
  5. In a large bowl mix together all the dry ingredients
  6. Then add the soya milk, apple sauce, water and oil and stir well. The mix should be fairly liquid, so add a little more soya milk if you need it.
  7. Turn on the waffle iron and leave it to heat, lightly grease the iron using oil or margarine
  8. Using a ladle, scoop the mixture into the middle of the waffle iron and bake (only put one scoop in and not enough to cover the whole iron as it will expand)
  9. When finished, take the waffle out of the iron, serve with whatever topping you like then eat and enjoy!

  2. Then add the soya milk, water and oil and stir well. The mix should be fairly liquid, so add a little more soya milk if you need it.

5 minute vegan raspberry and banana smoothie

Last night I wrote a recipe for a vegan banana milkshake, you can get the recipe for that here. It was sad to learn that Swedish Glace ice cream is not available everywhere in the world. Therefore I have created this smoothie recipe for Angela at uberdish and Celeste at Honk If You’re Vegan to cheer them up about not being able to buy Swedish Glace ice cream (because yes, it’s really that good). I’d like to remind everyone that I’m not getting paid to promote Swedish Glace, but I’d be more than willing to (please send me free stuff). Anyway, until the day comes when I become brilliant at everything and can make my own ice cream (which I will obviously post about here), here’s a smoothie recipe:
Ingredients:

1 large and ripe banana (or 2 small ones)
1 large apple (or 2 small ones)
2 handfuls of raspberries

Method:

  1. Peel the banana and chop it into small slices, put it in the blender
  2. Peel and core the apple and chop it into small piece then put it in the blender
  3. Add the raspberries to the blender and pulse until there are no large chunks of fruit
  4. Add between 50ml – 100ml water (I prefer 100, but all my friends tell it’s better with only 50)
  5. Blend the fruit and water together until sufficiently mixed (it should be a thick liquid)
  6. Pour into a glass, serve and enjoy!

Vegan mini chocolate croissants

Today we made some chocolate croissants/pastries for breakfast, unfortunately we were a bit too lazy to make our own pastry, so we used jus rol puff pastry which you can find in major supermarkets and is luckily vegan. If you want/have time to make your own pastry there is a recipe here

These are brilliant fresh out of the oven, i’d even recommend reheating them in the oven a little if you want eat them later.

Ingredients:

320g pastry

100g vegan chocolate (I recommend using dark chocolate but not more than 60% cocoa)

Quarter of a glass of soya milk

Method:

  1. Preheat the oven to 220°C/gas mark 7. Unfurl the sheet of pastry and then cut it into six squares.
  2. Cut each square diagonally to give 2 triangles (they will appear quite small). Put the triangle with the wider part facing you, and the point away from you.
  3. Break off small pieces of chocolate to place on the wider part near you.
  4. Then carefully roll from that chocolate-loaded end towards the point of the triangle.
  5. You should now have something resembling a straight croissant. Seal it slightly with your fingertips and curl it around into a crescent.
  6. Place the 12 chocolate croissants on a lined but not buttered baking tray and paint with the soya milk. Bake for 15 minutes until they are golden and puffy. (Half way through, I took them out of the oven to add a little vegan margarine on top of them, you can do this too if you want, but it’s not necessary).
  7. Take them out of the oven and enjoy!

Vegan blueberry pancakes

The blueberries in this recipe are optional as the pancakes also taste really good without them too. The banana serves as an egg replacement, but the pancakes do not taste like bananas.

Ingredients:

  • 130g/4.5oz plain flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1 tsp of vanilla extract
  • 2 handfuls of blueberries (optional)
  • pinch salt
  • 240 ml/8 fl oz soya milk (or any non dairy milk)
  • 1 ripe banana
  • 1 tbsp vegan margarine
  • Icing sugar (optional to serve)

Method:

  1. Mash the banana with a fork and set aside.
  2. In a large bowl combine the flour, baking powder, sugar and salt and mix with a spoon.
  3. Add the soya milk, banana and vanilla extract and mix well with a spoon/whisk.
  4. If it is too dry add a little more milk.The batter should be pourable but not too runny.
  5. Add the blueberries (if using) and mix them in well with a spoon.
  6. On a medium heat melt the margarine in a frying pan and then add to the pancake mix.
  7. When bubbles appear on top it is ready to flip over.
  8. Cook for a minute or two on the other side.
  9. Serve with a sprinkle of icing sugar
